Quinoa & Black Bean Salad

This quinoa and black bean salad is a hearty, diabetes-friendly option that’s rich in protein, fiber, and flavor. It’s perfect for a light lunch or as a side dish, helping to keep blood sugar levels steady while offering delicious ingredients. Ingredients 1 cup cooked quinoa, 1 cup canned black beans (rinsed and drained), 1 cup diced bell peppers (any color), 1/2 cup cherry tomatoes halved, 1/4 cup red onion finely chopped, 1/4 cup fresh cilantro chopped, 1 lime (juiced), 1 tablespoon olive oil, salt and pepper to taste, 1/2 teaspoon cumin (optional) Instructions In a large bowl, combine the cooked quinoa, black beans, diced bell peppers, cherry tomatoes, red onion, and cilantro. In a separate small bowl, whisk together the lime juice, olive oil, salt, pepper, and cumin if using. Pour the dressing over the quinoa salad and toss gently to combine.
