Ingredients Eggplant: 1 large Tahini: 2 tablespoons Garlic: 1 clove, minced Lemon juice: 2 tablespoons (freshly squeezed) Olive oil: 2 tablespoons (plus more for drizzling) Ground cumin: ½ teaspoon Salt: To taste Smoked paprika: ½ teaspoon (optional for extra flavor) Fresh parsley: Chopped, for garnish Instructions Roast the eggplant: Preheat your oven to 400°F (200°C). Cut the eggplant in half lengthwise and place it cut-side down on a baking sheet lined with parchment paper. Roast for 30-35 minutes, or until the skin is charred and the flesh is soft.
